Cottage cheese has been all the rage the past year plus and we have been totally on board with that trend. It lends a beautiful, soft texture to the banana bread similar to yogurt or sour cream.

Its a bit healthier by our use of almond flour and oat flour instead of traditional all purpose flour. Also we are leaving out the granulated sugar and opting for a limited amount of maple syrup. Let’s let the bananas do the work.

Healthier Cottage Cheese Banana Bread

- 8×4 inch loaf pan
Ingredients
- 2 eggs, lightly beaten
- 4 small bananas
- 1/4 cup olive oil
- 1/4 cup maple syrup (or honey)
- 1/2 cup cottage cheese, drained
- 1 tsp vanilla extract
- 1¼ cup oat flour
- 3/4 cup almond flour
- 1 tsp cinnamon
- 1½ tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
- Preheat the oven to 350℉. Line an 8×4 inch loaf pan with parchment paper.
- To a large bowl, add the eggs and bananas, mash with a fork. Add in the oil, maple syrup, cottage cheese and vanilla extract and whisk together. Next add in the oat flour, almond flour, cinnamon, baking powder, baking soda and salt. Fold it all in until a thick batter forms and no more flour is visible. Transfer the batter to your pan and bake for about 45-55 minutes or when toothpick comes out clean. Cover the pan loosely with foil if the loaf starts to get too brown on top. Allow the bread to set in the pan for about 10 minutes then transfer to a wire rack to fully cool before slicing.
Notes
Make sure your oat flour is gluten free to keep this a gluten free recipe.
